Burger Margherita…with tofu mozzarella, heirloom tomato and basil.
To make the tofu mozzarella, I take a soft block of tofu and add what ever minced herbs you like to 1/4 cup liquid smoke. Smoke the tofu in the liquid smoke mixture then cut to size of your bun and use. Viola. I don’t smoke the tofu until it is brown for this preparation…here is a recipe if you would like to smoke yours:
